Meatloaf for Mikey
Michael leaves for the University of Oklahoma on Thursday so tonight I made his going away meatloaf.
Photo really does it no credit. It's the finest of all loaves...as Ed says.
Nan's Meatloaf (originally taken from the Oster Blender cookbook-no kidding)
2 lbs lean ground beef
1 1/2 cups italian style bread crumbs
mix these 2 by hand in a big bowl.
Then in a food processor, mix:
1 onion quartered
1 cup ketchup
1 Tbsp worcestershire sauce
1 egg
1 tsp salt
1/2 tsp fresh cracked pepper
Mix these into a nice sauce - a bit textured is good. Then pour the sauce into the meat and breadcrumbs and mix - by hand - until it's all mixed up GOOD. Form into a loaf. Cook at 375 for about 45 -50 minutes. Let cool for 10 minutes then slice. Serve with garlic mashed potatoes. MMMM good!
