Salmon Burgers with Michael & Sarah


Today we're having some fun...Yesterday I watched More Fast Food My Way with Jacques Pepin on PBS with Michael and Sarah (my son and his girlfriend). It was a great fun menu, so we decided to make it ourselves today. So tonight, we're making Salmon Burgers, Tibetan Bread and Caesar Salad (which is actually Martha Stewart's Caesar Dressing recipe.

Dinner with Sarah and Michael

Salmon Burgers
2 lbs salmon cut into small cubes for food processor
4 slices bread cut into cubes for food processor
1/2 cup sliced green onion
4 button mushrooms cut up for food processor
salt and pepper

Put all above ingredients into food processor and pulse just until mixed. Form into patties and fry in olive oil until golden on both sides. Serve atop bed of greens or on a burger bun if you like.

Tibetan Bread
1 1/2 cups flour
1 cup water
1 teaspoon baking powder
1/2 teaspoon salt
1 Tablespoon water

Mix all ingredients in bowl until sticky dough forms. Heat 1 Tablespoon olive oil in skillet. Spread dough onto bottom of skillet, spooning some olive oil from the pan on the top of the dough. Pour 1 tablespoon of water around outside of the dough in the pan to steam it, and cover. Cook side 1 about 10 minutes on medium heat then flip and cook side 2 about 5 minutes. Voila - Tibetan Bread.

Caesar Salad Dressing
2 cloves garlic
4 anchovy filets
1 tsp salt
1 tsp freshly ground pepper
1 tablespoon freshly squeezed lemon juice
1 tsp Worcestershire Sauce
1/2 tsp Dijon mustard
1 egg yolk
1/3 cup extra virgin olive oil
2 heads romaine lettuce
1 cup freshly grated parmesan cheese

Put all ingredients (except lettuce and parmesan) in food processor and process until mixed. Pour over romaine, add parmesan and toss into the best salad you ever had....

We had too much fun doing this! We'll do it again soon.
