Truffle Mac 'n Cheese with Grilled Chicken & Apple Sausage
Tonight's dinner - Truffle Mac 'n Cheese with Grilled Chicken & Apple Sausage. Just made Mac n cheese with bow tie pasta I had on hand. Blended fontina and gruyere cheeses into a standard cream sauce, but seasoned with Truffle Salt instead of plain sea salt. I always use chicken and apple sausage from central market, and since the wind was howling at 40 mph, decided to cook sausage on the stove. I think the biggest problem most cooks have is they overcook things. Leave some juice in that sausage and you'll be glad you did.
